The good product is
ORGANIC.
Why ? It is better for man and his planet. It has taste and more nutritious power than any regular product. So if you dont want to cook water...
It is more healthy and in the end cheaper : its’ price is 10% higher, but has 30% more dry matter and less impact on your health budget than the regular dose of pesticides and other chemicals usually proposed to us.
In France our organic butcher as well as the one of some of the best French chefs, is PHILIPPE ANDRE, breeder and butcher, which is rare in France, on the fringes of Paris at Boulogne Billancourt. He delivers everywhere in France and with him we are sure of getting an animal grassed on real grass, with proper rotations of soil and state of the art breeding.
IF YOU CANNOT BUY ALL ORGANIC, at least buy ORGANIC OIL: All the pesticides, heavy metals and dangerous ions concentrate in the pollens and in the seeds. So dont buy oils from deep rooted plants (like grape seeds... olive tree live on superficial roots) 2° health principle : always combine crude oils: while combining their taste and activ principles they reenforce their action.
Balance :
Go for biodiversity and creativity. Its’ so more fun.
For better happiness try less meat. Try to combine the leguminous plants (peas, beans,.) with cereals and tubers. The combination of these 2 or 3 stuffs equals the meat mollecule. The world of taste you are now entering will dazzle you and you will feel far better.
Give your preference to cereals with slow sugars like quinoa and potatoes grown in difficult conditions such as the real “papa nativa”, the genuine Ande’s potatoe or the ones cropped near the sea or high up in the mountains: their starch is slower than the regular ones.
Ban sugars, replace them by inverted sugars, for diabetics like kitul, a palm special sugar, cactus sap or even better stevia if your preparation allows a slight taste of liquorice.
Cooking and baking :
Slow and low for the meat.
Almost inexistant for the fish.
Quick for vegetables, avoiding water... all the goodies of the veggies dissolve in it (unless you will use the cooking water later - we wip the potatoe in its concentrated cooking water for the mash)
The broth :
Almost all our recipes use broths that never boil, made in a special chinese medicinal broth machine, often more than 48h00, according to the ingredients :
- to take advantage of all the left overs and peels of organic products;
- to complete with nutritive facts for better health food.
It is very strange that in the XXth century France, we have officially dissociated health and food.
Plants are static beings. Their only way to survive and multiply is through chemistry : their taste and activ principles.
It is therefore important to know the nature of plants to use them. This knowledge finds its practice along with reading and sharing with plants therapists or intelligent botanists and people close to nature.
This knowledge is daily practiced in Chinese cookery and many Chinese broths have a medicinal base.
